All about Maida Flour (मैदा आटा)

Maida Flour is a white flour from the Indian subcontinent, made from wheat. Maida Flour is used extensively for making fast foods, baked goods such as cakes, pies, pastries, bread, several varieties of desserts, and traditional flat-breads. Due to the wide uses of Maida Flour, it is sometimes labeled and marketed as "all-purpose flour". Maida Flour is very common in Indian cuisine especially for the making of various Indian bread, and chapatis (Tandoori Roti, Laccha Paratha, etc.). It may also be used as a thickening agent. Maida Flour is white and powdery, unlike whole wheat flour which is creamish and grainy. It may contain chemicals like benzoyl peroxide and alloxan which are added during the bleaching process. 

Since Maida Flour is made from the white starchy part of the wheat grain there is a great loss of nutrients, and hence whole wheat flour is preferred by many as compared to Maida Flour. 
Notes: While purchasing flour make sure that the color of Maida Flour is white and without any yellowish tinge. Store in dark, cool, dry places and in containers where the flour can breathe.

 Usage of Maida Flour (मैदा आटा)

Maida is most commonly used in bread, Bhatoora, naan, tandoori, cookies, pastries, cakes, and Indian sweets. It is used for making noodles, the outer coverings of samosas, momos, pasta, spaghetti, pizza crusts. Our breakfast staple white bread is made with Maida Flour (मैदा आटा). It may be used to thicken sauces or as a crusty coating for fried foods. It is also used in Indian mithais.

Nutritional Value of Maida Flour (मैदा आटा)

The remains left behind once the bran and germ are removed from the wheat, are known as white flour or Maida Flour (मैदा आटा) 

The Bran contains 76% of vitamins and minerals in Maida/white flour. Hence, the nutritional value of the leftover product is negligible.

According to USDA data, a cup of white, all-purpose, enriched, bleached flour is a very good source of selenium, riboflavin, niacin, and thiamine. It is also a good source of copper, iron, phosphorus, and zinc.
