 Semolina is derived from the a Italian word, semolino . During 1790–1800 period ; alteration of Italian semolino i equal ivalent to semol(a) bran (≪ Latin simila flour) + -ino diminutive suffix. .... It is a milled flour of hard wheat used mainly in pasta.

semolina is also popularly called as rava or Suji is made from dried durum wheat. The colour of the Rava or Suji(semolina) depends on the quality of wheat. Semolina is usually yellow in colour when made from hard(Durum) wheat. When made from other softer wheat types, the colour is white. It is available all-year round.

Usage of Semolina(सूजी).

Semolina is commonly used in making pasta, puddings, cereals and couscous. It is an very essential battering ingredient in many Indian dishes. A fine version of rava or Suji(Semolina) is used for batters, whereas a coarser(harsh in texture) form is used as an ingredient in many dishes. Semolina is used in various forms in various cuisines and various dishes. In North America and North Western Europe , Semolina is served as a dessert, boiled with milk. Mostly Italians peoples use semolina while making gnocchi and pasta. It is also used sprinkled over the recipe to avoid sticking. In south Indian cuisine, semolina is used to prepare savoury dishes like Rava Dosa,  Rava Upma, Rava pongal and Kesari, a mildly spiced dessert-cum-sweet dishs. In India Semolina is also used to make the ever so popular dish know as ., Suji ka Halwa. In Western countries, Semolina is flavoured with Vanilla and served as a jam or red-currant sauce.
Semolina gives a tender texture with a pleasant taste while cooking pasta. To prevent sticking, Semolina is used as an alternative as an baking flour in many  dishes. A small pices of durum semolina is added to the mix flour to make the crust tasty.
